The meat in each ground beef package will come from one specific animal, unlike a grocery store ground beef package, which can contain meat from hundreds of animals. Ours is generally 93% lean and comes packed loose or in pre-made patties.

My family loves beef heart. We slow cook it, and slice it and eat with carmelized onions or use it for sandwiches. The taste and texture is very similar to roast beef.

Beef shanks are a cut that have a section of leg bone, along with the meat that surrounds the bone. Inside the bone is succulent marrow, and the meat is tougher yet richly flavored due to the constant use the leg muscles receive. It is delicious and tender when braised and cooked low and slow.
